Many of the recipes provide detailed instructions for mixing unique flavors, such as orange, vanilla, nut, ginger and several others. These are complimented by extensive notes on the use of sweeteners and flavor extracts. Schimmel & Co. was, in the years before WWI, a pioneer in the production and use of essential oils, extracts, flavors and fragrances.
